So, after several more bad loaves (hey! free breadcrumbs!) I decided to change tactics, starting with a simple white bread. I believe the recipe I ended up with was the James Beard one.

Round 1:




Oh hai there, mister dough ball. This loaf came out a bit lumpy and doughy - I think it collapsed a bit. I wanted to see where the process was going wrong, so I had to abandon the breadmachine. Kneading was kinda fun - good stress release ;)


Result: several good slices of bread, and a pile of irregular wads that will make some kickass French toast this weekend or maybe some very sated ducks at the pond. It's a mild, slightly salty loaf. Not my preference, but good for breakfast.

Round 2:

I watched the rise more carefully this time. I also shaped it and, when I got the wobbly weird seam at the bottom, I just put that on top and the flat side on the bottom. Oh, and I threw in some moosir powder - moosir is dried, powdered elephant garlic - yum yum.)

Result:




Hubby's in the other room, wants to know what I'm doing, as I open the oven door and get a faceful of delicious garlic fumes. I said "I believe I'm making food porn."

It feels so good to be making progress with this! I love making bread.

I've also rebooted my sourdough starter with rye flour. *crosses fingers*

Hey divers,

Is anyone here from Toronto? I've just moved here and, no coincidence, gone broke. I've thought about dumpster diving for a long time, but never before for financial reasons. Now I'm looking for any way to supplement my meager income. I was wondering if anyone has any tips, good locations, best times, etc. for Toronto, downtown specifically.

How scared do you guys get when you're out diving?

I'm talking about fear of anything, really: cops, the dark, dangerous things in the dumpster, etc.

Does it stop you from diving?

If not, how do you get over your fears?

Is anybody in the New Haven CT area either willing to dive Trader Joe's in Orange or ALDI Route 80 by bicycle, or with a car and down to have a buddy to go DDing with that'll pitch for gas? The friends I used to go with don't go anymore, I don't have a car and I feel apprehensive about riding a bike alone in the suburbs after dark to do something quasi-illegal such as dumpster diving.

A long while back, my bro brought my mom some moose meat, and the too well done result was very disappointing. It taste almost like beef steak, without the the usual, um, richness that I like in beef steak? My bro said it was because it's too well done, and after being cut into french fry sized strips to fit into a bowl, most of it went into the fridge.

Much later, and I'm hungry, and I tried one of those strips cold, and then with ketchup, and it was delicious.

10:33 pm - Sourdough fail :(
I got it started with my commercial yeast, and it was looking fine - nice and frothy, hooch on top (I stirred it back in each time I fed it) and smelled quite sour.

Proofed it yesterday, it got 2x bigger and bubbly. Yay. Made bread. It rose very nicely and the resulting bread is soft, thick, and fluffy, but it isn't sour :(

What can I do? What kills the sourness?

Short introduction, hi I'm new and I love meat. We all aquainted? Great, now for the good part.

Went through past posts and didn't see this so I thought I would post this. Sam Neill did several ads promoting the consumption of meat and they are quite delightful.

I am home sick with some funky upper respiratory thing and I was bored and decided to look up some vegan communities so I can sit back have a few laughs and maybe get some phlegm coughed up in the process and I noticed a disturbing trend...

From the list of Results for communities interested in "vegan" link above, I think I counted 7 pro-anorexia communities. One that really freaked me out was ana_moms or some crap like that. People mentally disturbed procreating. And are proud of it. Ew.

But I notice the common trend here is people freaking out over what they eat, down to every detail. And yes, anorexics can be catty bitches too...I had an experieince where I was dining out and enjoying my spaghetti and meatballs and thick slice of garlic toast for a lunch break while these skeleton hags were leering at me and making outdoor voice comments about me and how I shouldn't be eating that while they picked at their crappy salads. I pretty much replied something akin to, "Don't be hatin' because I am comfortable in my own skin and can enjoy life in general. Mmm, this shit is sooo goooood!" and mmmmmed throughout the rest of my meal.

I guess my point is, there is apparently some link between two exclusive groups of mentally disturbed people who have food issues. Thoughts, anyone?

I'm starting to expand what I can do with my sourdough starter.  I've got a whole wheat starter (using King Arthur 100% traditional whole wheat flour because I love the taste it has), and have a recipe for a sourdough chocolate cake I obtained from a relative but I'm terrified to try it.

Anyone try any desserts or other baked goods which might use a sourdough starter?  Also, any thoughts on not using baking soda/powder as a levening agent? I have used baking soda in doing sourdough pancakes otherwise my whole wheat starter is just too dense for pancakes, and was curious if anyone has any insight on this before I launch into full scale experimental mode :)
